Roasted Pumpkin & Parmesan Salad (Serves 1/2)

INGREDIENTS

  • 1 cup sliced pumpkin
  • 2 cups mixed greens
  • 1 cup shaved parmesan
  • olive oil
  • salt & pepper
  • 1 tbsp toasted flax seeds
  • ½ cup halved cherry tomatoes

 

DRESSING

  • 3/4th cup whole grain mustard
  • 1 tbsp white wine vinegar/malt vinegar
  • 2 tbsp olive oil
  • 1 tbsp honey
  • ½ tsp garlic
  • salt

 

METHOD

  1. In a baking tray, place the sliced pumpkin & drizzle with salt pepper & olive oil and cook till soft
  2. Remove and put on a pan and cook on both sides to get the caramelizing
  3. Arrange on the plate with salad leaves & tomatoes
  4. Pour the dressing
  5. Top with parmesan shavings and flax seeds

SERVING SUGGESTION

Garnish with toasted flax seeds and parmesan shavings.
