Chicken Breasts wrapped in Bacon Served with Roasted Garlic Mashed Potatoes (serves 2)


  • 4 chicken breasts
  • 8-9 strips of bacon
  • 1 onion chopped fine
  • 1 table spoon of crushed garlic
  • 3 spoons of red wine vinegar
  • ½ cup of torn basil leaves
  • 3 spoons of olive oil
  • salt & pepper
  • 4 medium potatoes boiled in salted water and de-skinned
  • 1 bulb of garlic
  • ½ cup of cream
  • 3 table spoons butter



  1. Strain the potatoes through a sieve to get a fine paste
  2. Add the onions, crushed garlic, basil, vinegar, olive oil and salt & pepper to the chicken breasts and marinate for at least 4 hours
  3. Take the whole bulb of garlic and rub olive oil all over it
  4. Cover the garlic bulb with foil and place in the oven at 200 degrees for 30 minutes
  5. Once soft and baked, squeeze out the garlic into the potatoes
  6. In a pan heat butter, add the potato mix and stir well. Add the cream and season.
  7. Take the marinated chicken and roll the bacon around it
  8. Take a gripp and drizzle with oil
  9. Cook the chicken until it’s done
  10. Brown it with butter
  11. Spread some potatoes on the plate and top with the chicken breast


Garnish with some roasted garlic cloves, a few drops of the chicken butter and some parsley
