Black Olive Tapenade Marinated Toasts (serves 4)


  • 15 slices of a baguette
  • 20 black olives
  • 1 teaspoon garlic
  • zest of 1 lemon
  • 2 table spoons olive oil
  • handful of fresh basil leaves
  • 1 packet of fresh buffalo mozzarella
  • Salt & Pepper



  1. Rub olive oil on both sides of the toasts and put on the baking tray at 160 degrees for 10 minutes. Remove when crisp
  2. Slice the mozzarella into slices and put aside
  3. In a mortar and pestle, add the olives, garlic, oil, basil and zest and season. Pound well into a paste
  4. Spread the olive tapenade on the mozzarella
  5. Put the mozzarella on the toast and put it back into the oven to bake at 180 degrees for 10 minutes
  6. Removes when the mozzarella is golden and completely melted



Slice juliennes of red bell pepper and sprinkle on the toast before serving. Serve warm.
